Brian was really busy this past week, which meant that I was the one doing the majority of the cooking. Pinterest is really where I get most of the recipes I want to try. And if I don’t find it there originally, that is how I organize it if I find it somewhere else. I like posting what we thought of the new things we’ve tried so that I can look back and remember what we like and what we didn’t like.
Our friend Hannah, who was my next door neighbor for a long time and now goes to college here (yay!), came over the Sunday before last and we made this enchilada casserole from Iowa Girl Eats. I thought it was so good! Brian thought it was okay. I didn’t defrost the chicken for very long beforehand, so it took a long time to make, which resulted in me being impatient and not baking it at the end for as long as it should have been. Definitely bake it for longer next time.
Hannah and I also made these cupcakes. They were awesome! We didn’t soften the cream cheese for the frosting first, which was a mistake. But otherwise, they were perfect and so yummy, and not too bad for you!
I made this crock pot recipe last weekend to mixed reviews. I loved it- Brian didn’t. I think I ate twice as much as him at dinner which has never happened before. But the next day we both practically licked the bowl clean at lunch… so I’m not sure what to make of it. It was super easy, delicious, and cheap so it has that going for it! It’s also nice to find a crock pot recipe that doesn’t have to cook all day if you don’t get it in in time (this one goes for only 3-4 hours).
I found this on Pinterest and picked it out because I know how much Brian loves pineapple. This was another easy one (I’ve just been loving my crock pot lately!) We ate it with broccoli over brown rice, and it was delicious! It tasted like Chinese carry out. Yum!
We bought frozen tilapia last week and Brian made this recipe last night. It was really good. Usually when I have fish of some kind, I try to convince myself that I like it, but it still tastes fishy to me. (Except for salmon, I LOVE salmon!) This was not the case! This genuinely tasted good, and it was pretty healthy, too! Brian even liked it, and he typically really dislikes fish.
My new goal for fall is to try to eat healthier. I have this tendency when summer ends to throw all caution to the wind through the holidays and then have some serious work to do after the new year. I’m on the lookout for lighter comfort food types of recipes. Please share if you know of any!
