Remember when I ate salad every day for a whole month?  I’ve been thinking about that a lot lately, because since we moved back home it’s been hard to get into a healthy eating kick.  For some reason, the more of us there are the more tempting it is to eat dessert every night.  Seriously, you should have seen the cake the Brian made  (and we all polished) last night- it was insane!

I want to get better about eating salad and fruits and vegetables- but I feel kind of bored with my go-to grocery items.  What are your favorite healthy things to eat?  Like you get excited about eating it because you love it, not because it’s healthy.  For me, that’s strawberries.  Or blueberries.  I love them!

I love fresh green beans! They are a great go to snack to have in the fridge during the summer. I also like to freeze blueberries & rasberries and put them into yogurt or eat them frozen–then they feel a little bit like a desert! Hope this helps.

Blueberries are definitely one of my favorites too! I also really love brussel sprouts; I like to fry them up with balsamic vinegar and cranberries. Soup is another thing I really like to make when I'm trying to be healthier…lots of veggies!

I'm on a carrot kick ever since I discovered this recipe for cumin-lime roasted carrots: http://familystylefood.com/2011/03/roasted-cumin-lime-carrots/

And I drink a smoothie of coconut water, RAW protein powder (no dairy or soy in it), spinach, frozen raspberries, frozen blueberries, and a couple of frozen pineapple chunks every morning. It helps me get a lot of fruits & veggies in one meal!

This may be kinda weird, but I genuinely enjoy my daily lunch of tilapia (cooked on the stovetop with coconut oil) and steamed broccoli! I also LOVE Brussels sprouts (browned with lots of butter and salt & pepper). It's tricky 'cause everyone has a different definition of “healthy,” but I am a firm believer that butter, in moderation, is great for you, so that makes my veggie experiences much more pleasant :)

We are trying to eat healthier and I made steak tips (got a lean strip)and cooked it with red and green peppers and onions. OMG, it was so good!! I love salads and as a treat I like the ones from Chipotle – get chicken, black beans and extra fresh salsa and it's so good but it feels naughty because it's Chipotle. Unfortunately I don't get the dressing, cheese, sour cream or my favorite guacamole but it's still tasty!

Did you notice a difference in your weight when you were eating a lot of salads? I'm trying to be better about that, but usually I add it to a meal so I'm still getting extra calories.

I love Kashi granola bars, bananas, cantaloupe & watermelon.

Cheeseburgers are my absolute favorite. I gravitate more towards meats than veggies. I feel I eat healthy when I use lean ground beef & have it without the bun since I live a low carb lifestyle. I have to say I rather pair my burger with kale chips than french fries. Not a big fan of starchy foods. Working on incorporating more fruit into my diet. I would check pinterest for recipe ideas when you feel like you're getting board with your food choices. Good luck!

OMG I know what you mean! Since I moved back home i've gained 5lbs! I think it's all the fun social events, gathering, and just being together. It makes me eat more! I think a good trick is to buy a lot of fruits and veggies and have them cut up and ready to eat in tupperware in the fridge.

My go-to yummy salad is baby spinach with feta cheese, almonds and some type of fruit, usually strawberries or pears. The feta and almonds are both high-calorie, but that's what makes them yummy. :) Plus, they have good nutrients, and the spinach and fruit calories are almost non-existent so it's an overall healthy meal!

Oh man, salad for a month!?! That sounds intense! But it's true, the more mouths you have to feed, the harder it is to be healthy!!!

I'm finding myself having the same struggles that you are. My go to healthy choice is fat free greek yogurt. It's yummy and high in protein.

I love carrots! and bananas. and apples with peanut butter! I try to convince myself that still adding peanut butter to fruits is ok…if I don't overdo it! Strawberries are fantastic, you're right on there!

I actually love salad! I love the feeling I get when I'm full of fresh and delicious good foods – and no guilty feeling afterwards. You can jazz up a salad in so many ways as well. They're so versatile. It's definitely salad weather now.

Ah man, I got soooo bad with my eating during the semester. It was totally out of control. I was baking all the time, and then eating it all. Bad bad bad. I'm trying to get myself back into a healthier eating regime. Watermelon is my go-to food at the moment. It's delicioussss and really filling. So I'm eatin' it like it's going out of style!
