Recipes and great and all, but you know what I really love? Non-recipes. I know that sounds dumb, but hear me out. I never thought that I enjoyed cooking until I discovered that you didn’t always have to make something by following a recipe word for word. You see, I just don’t really get much out of measuring ingredients and following directions. It’s not like I’m above that or anything (I do it all the time) but that’s not when I get really excited about cooking.
That’s why I love this potato dish. There’s no recipe. I’m not even going to give you measurements. And you can make it to feed a crowd, or just two people. I made this a lot this summer at my parent’s house- it goes with everything, and it’s super easy.
All you need is potatoes, an onion (I like to use Vidalia), a few pats of butter, and enough Parmesan cheese to cover the top of your dish.
First thing you need to do is slice the potatoes. The best kind of potatoes to buy are gold or red so that you don’t have to peel them (I know- lazy.) We didn’t have those so I went ahead and peeled them, and then you layer them in the dish that you’re using (I always spray the dish cooking spray, just to be safe.) Then just slice your onion and arrange it on top of the potatoes.
Next, cover the top with cheese! I like a pretty hefty layer of cheese. Then just stick a couple of pats of butter on top, cover with tin foil, and throw it in the oven at 350°F for an hour. I think the foil is optional too- I took it off for the last 10 minutes or so this time to let the cheese brown a little.
And there you have it! It’s pretty much foolproof. I made this pan fried chicken in butter and herb sauce (which I found on Pinterest, of course) and I really liked it, but next time I think I would pair each dish with something lighter- the combination was pretty buttery. But of course, there are worse things…

This post made me smile :) I never use recipes, not even when I bake. I see them more as “rough guidelines” than anything, and definitely like to put my own twist on things. It works, since I’m a pretty good cook (if I do say so myself…).

This looks lovely, I really like doing potatoes this way, I often mix in some sweet potatoes too or maybe tomatoes/leeks just to mix it up a bit
Yum! I’ve been meaning to make sweet potatoes sometime, I’ve never done it before! I’ve only had them at restaurants and at Thanksgiving with marshmallows on top, and I’m not a huge fan of that combination.
