I know I’ve blogged salads to death over the last few months, but I thought this little guy deserved to be revisited. As much as it hurts my little honey-mustard-loving heart to say it, I think this is my favorite salad ever. I eat it a lot. And considering how often I eat it, I thought I should look into it’s nutritional value a little more, because at first glance it looks anything but light.
Here’s the “recipe” with the nutritional info breakdown, complete with Weight Watchers, Points Plus:
- Romaine lettuce, chopped (10 calories for a cup, which is an estimate, but it counts as no points on Weight Watchers!)
- 1/4 cup corn (40 calories, 1 point)
- 1/4 cup black beans (55 calories, 1 point)
- 1/4 cup cheddar cheese (110 calories, 3 points)
- 1/8 cup, or 2 tbsp, Hidden Valley Light Ranch dressing (80 calories, 2 points)
- 3 tbsp french fried onions, I usually buy Great Value instead of French’s (80 calories, 2 points)
- Salt and pepper to taste
I’ll take it. Again, and again, and again. Seriously, go make this.
Also, I had an epiphany the other day, and I thought I would share it with you. The secret to a good salad is patient tossing. I know that sounds weird, but the difference between a salad that tastes like you made it versus a salad made by someone else is thorough tossing. I use little motions for like a full 30 seconds to make sure the salad is tossed evenly. Okay, I’m done being a freak now. Continue with the rest of your day.
Ah, the salad tossing secret makes sense! I always find it so difficult to get just 2tbsp of dressing to cover my whole salad! Maybe I need to work on my tossing skills and do it for at least 30 seconds! Great tip!!!!! :) I think I might have to try that salad, soon!

I'm with you on the tossing. I love to get panera salads to-go even if i'm gonna eat it there so I can put the dressing on, close the lid to the to-go container and shake it all up. It comes out perfectly tossed and evenly dressed. amazing.
Ok, so this is going to totally blow the point count, but I make almost this exact salad but as a pasta salad. Take out the french onions, replace the lettuce with some rotini, and you've got one of the easiest, yummiest pasta salads out there. So good.

Haha, you're so right! Making sure your salad is thoroughly tossed is very important. That's why I always make mine in a huge bowl!
haha I make mine in a huge bowl too! You probably can't tell from the angle, but that salad is really taking up like half the space in the bowl. And I tried to make the bowl look a little cleaner after I tossed it so that it didn't look gross for the picture, normally there is dressing everywhere!

Mmm! I have a recipe for a salad like this called “taco salad” – it's pretty much everything you mentioned plus whatever I feel like putting in that I would put in a taco : ) plus a tortilla sprayed with baking spray and wrapped around a dish to make a bowl. And this awesome honey/lime dressing – basically honey, lime, and some salt – I don't think it's anything other than that, maybe cilantro? Anyway, so good. What I didn't know what how healthy it is! Thanks for sharing!
